Loaded Oatmeal Chocolate Chip Cookies


It would not do these cookies justice to call them “chocolate chip cookies”, but that is what was on the recipe when I got it from one of my friends the other day. Her grandma is a lunch lady and makes huge batches of these cookies for the kids at school. I cut the recipe in half and it makes about 4 dozen cookies. If you need to you can cut the recipe in half again. These are SO good! Don’t leave a single thing out if you can help it.

Ingredients

1 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
4 oz. grated Hershey’s chocolate bar
1 1/2 cup chopped nuts  (I use pecans, but any type of nut works)
12 oz. chocolate chips
2 cup flour
2 1/2 cup blended oatmeal
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Directions

Preheat oven to 375°. Cream butter, sugars. Add eggs and vanilla. Mix dry ingredients,
then add chocolate chips, bar and nuts. Bake approximately 10 minutes.

When I made these cookies the first time there were so good, don’t get me wrong, but the second time I changed a few things and they are, dare I say, better. When I got the chocolate bar at the store I accidentally got the Symphony bar with nuts and toffee, but it was the best mistake I made all day. I also used wheat flour for half of the flour it calls for and it worked great!

Also, if you don’t use parchment paper–you should. It can go in the oven, it’s non-stick, and I used the same sheet for all 4 batches. Then I shamelessly took the sheet off and put the pan back in the cupboard. Go ahead. Put it on your grocery list.
